Roasted Potato Salad
Scrub and cube 12-15 small red potatoes. Wrap with a tablespoon of butter in tin foil and place on the grill for about 15-20 minutes per side or until tender. If you perfer or don't have a grill you can roast them in the oven under the broiler turning them every 5 minutes until tender.
Hard boil 4 eggs
In the mean while slice up in a large bowl:
2 small cucumbers
1 large tomato
Sprinkle on a good amount of Delallo's dipping spice--the Sundried Tomato & Basil.
salt and pepper to taste
and drizzle olive oil over all and mix.
