Two Great Original Recipes!!

 My husband grew up in the south and of course loves southern food.  So today we had collard greens, corn bread and black-eyed peas!  And OH was it good!!

I want to share a couple of recipes with you  that made our mouths water and brought a lot of compliments from my husband!  First is the cornbread that we both love and it is made without sugar and is so moist and very thick!

Cornbread 
Pre-heat oven at 450º

Ingredients
2 Eggs
3/4 Cup milk
1-1/2 Cup sour cream
1/2 Cup water
1 teaspoon soda
2 Cups cornmeal
1/2 teaspoon salt

Mix all ingredients together making sure the eggs and sour cream is mixed smooth.  Pour into a generously buttered 9 X 9 pan and bake for 20 to 25 minutes.   Serve hot with butter melted in the center!  Mmmmmm good!!


 While the cornbread is in the oven now is the time to make the black-eyed peas recipe.

Black-eyed Peas/Rice/Kidney Beans

Directions:  Place in a medium sauce pan:

1/2 of a 16 oz. bag of frozen "PictSweet All Natural Black-eyed Peas
1 Cup of rice
enough water to cover
Bring to boil and boil for 2 minutes.  Turn heat down to simmer and cover pan.

While this is cooking in small fry pan saute 1 chopped onion in butter.  When peas and rice are fully cooked (about 15-20 minutes) put onions in the mixture.  Mix in 1 cup canned red kidney bean with 1/4 cup juice from the kidney beans.  Heat through and serve hot.  Oh so good!!!
